Tried and True Recipe

My sister shared this salad with the family for dinner. It was love at first bite – the glazed walnuts, sweet and juicy strawberries, and tender, bright green spinach. It was a feast for the eyes and the palate

She worked in the public schools. There would be potlucks where people would bring a dish from home to share.  in those days, people actually prepared their own dishes, no take-outs.  They would bring a dish they knew people would enjoy.  

Potlucks were a great way to gather time-tested recipes. This salad – Strawberry Spinach Salad- is one of them.  Enjoy! 

Honey Glazed Walnuts:

RECIPE:  

  • 6 ounce Walnuts OR Pecans
  • 4 tablespoon butter
  • Honey, to taste

DIRECTION:  

In a skillet over medium-high heat, melt butter. Add walnuts and stir. Drizzle honey over the walnuts. Stir, then roast the walnuts in a for a few minutes. Cool on wax paper and store in an air-tight container. Refrigerate if made ahead of time.

Dressing:

RECIPE:  

  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1/4 cup fresh orange juice
  • 2 1/2 tablespoon Rice vinegar
  • 1 teaspoon Finely chopped onion
  • 3/4 cup canola oil
  • 1 teaspoon Mayonnaise
  • Fresh spinach (about 1/2 bag CostCo spinach, rinse and dry well)
  • Fresh strawberries AND/OR orange (fresh or 1 can of mandarin oranges) 

DIRECTION:

Toss all ingredients just before serving.
